on tonight's outdoor menu:
~ Batter Fried Eggplant ~
1 c flour
1 tsp salt
1/2 tsp tumeric
1/2 tsp curry powder
1/2 tsp ginger
1/2 cmilk or beer
1 medium eggplant, cut in 1/4-inch slices
1/4 c olive oil
Mix flour, egg, spices and milk or beer. Dip eggplant slices in mixture
and fry in oil until brown on both sides. Drain on paper towel
and salt to taste.
